I've changed the name because, we are fennel lovers in our house, so I have upped the "FQ" - Fennel Quotient that is :-) to the point where it should have the lead over the lemon!

In addition to the lemon and onion that roasts underneath the chicken in Ina's recipe, I have added a full bulb (reserve the stalks and fronds for a salad or other use) of thinly sliced raw fennel.  I have also added a tablespoon of anise liquor to the half cup of dry white wine that gets added near the end of the roasting time.

And so there you have it - Oven Roasted Fennel Chicken!
